The standard invoice template, and other correspondence such as payment receipt, pull your address and phone number from your company information in Salesforce. To make an update, go to:
Lightning Interface: Setup | Company Settings | Company Information
Classic Interface: Setup | Company Profile | Company Information
From there you should see Address and Phone.
