There may be some instances that an organization will be using a specific payment method for their clients. With Payment Center Winter '23 release, when you set your default payment method in Payment Center Settings, it will honor the default payment method while the clients will create their payment profile in an organization.

In our previous releases, when you set a default Payment Method in Payment Center Settings, the credit card option is still set as default in Create Payment Profile page.

In our latest release, when you set a default Payment Method in Payment Center Settings, it will honor the selected Payment Method in Create Payment Profile page.
